- 1 cup of millet
- 2.5 cups of water
- 1 head of cauliflower, cut into 1-inch pieces
- 1/3 to 1/4 cup of olive oil
- 2 Tbsp Umeboshi plum vinegar ( also called Ume vinegar – can be found at a health food store)
- A pinch of salt, to taste (umeboshi vinegar is salty)
Use a large pot that has a lid.
Add, millet, water and cauliflower to the pot and bring to a rolling boil, at medium-high heat. Reduce heat to low and simmer, covered, for 30-35 minutes, checking the pot at about 20 minutes and adding water if needed.
After, 35 minutes remove from the heat. Add olive oil and umeboshi vinegar and mash with a potato masher. Add salt to taste.
